I am a big fan of squid, I love it fried, in soup, in paella, I love a fried mix that my father made with squid, onion, green pepper, zucchini all floured and fried. We called it: field squid. Someday I will prepare you to return to my childhood and I will show you ok? This time I have made them in sauce and here I leave you how I did them.

The squid is typically cleaned, sliced into rings or tubes, and then simmered in a rich and aromatic sauce made from various ingredients like tomatoes, garlic, onions, herbs, and sometimes wine or broth. This dish can take on different regional variations, with popular renditions like Italian calamari in tomato sauce or Spanish squid in ink sauce, known as “calamares en su tinta.” The sauce infuses the calamari with a burst of complex flavors, balancing the natural brininess of the seafood with the savory, tangy, and often slightly spicy notes of the sauce. Calamari in sauce is a mouthwatering delicacy that showcases the versatility of squid and is often served as a main course or as an appetizer, accompanied by crusty bread or rice to soak up every delicious drop of sauce.
INGREDIENTS
- 1kg squid
- 2 small onions
- 10 grains of black pepper
- 3 bay leaves
- 2 chillies or cayenne peppers (large)
- 2 stock cubes or 2 glasses of chicken stock
- 200ml white wine
- Salt
- Peppers
DIRECTIONS
- First the squid are cleaned and cut, we leave them in milk until we have to use them.
- Cut the onion into julienne strips and poach it.
- Now we add the pepper, the bay leaf, the cayenne or chili peppers (I cut them in half), the stock cubes and the paprika.
- Wash the squid again and add it to the pan.
- When the squids start to cook, add the wine and cook until the alcohol evaporates.
- Add water or chicken broth (since I didn’t have chicken broth, that’s why I put the pills in and added water)
- Cook until the squids are soft and the sauce has a good consistency.
- It is enjoyed, at home we eat it with a little basmati rice.
