My Moussaka

When my father was still alive, I remember that my friends always wanted me to invite them home to eat when my father made lasagna, because it turned out so good. Personally, I don’t like pasta very much, so I took my father’s recipe and replaced the lasagna pasta with grilled eggplant, and the bechamel sauce with a little cream. This way it was easier for me to make and it seemed a little lighter, although with so much cheese…it is a heavy food.

These snacks are very easy to make and very tasty, you can surprise coconut lovers,and for this recipe you only need three ingredients and that’s it. You can make them for a sweet table, for a party as an appetizer or even have them ready in case a visitor comes in the next few days after you bake them. You can keep it very well in a can, covered with transparent paper, even for more days you can put the can in the fridge. Cinnamon, vanilla, or grated zest can be added if you want a different twist. Be careful because they are addictive.

The Best Cheesecake

This cheesecake is the one I always make, I have tried several versions and although they all turn out very good, I always go back to mine, to my mother’s. And with which I always triumph wherever I do it. It is super easy to make and with ingredients that can be found anywhere in the world. The decoration is optional and I always do it with what I have at home, sometimes it comes out prettier and sometimes less, but the taste is always the same, spectacular.

Easy Beef Curry

Beef curry is among my oldest daughter’s favorite dishes. She loves to eat it with rice. Normally we do it with brown rice to make it healthier, although it is better to eat it with white rice and even better to eat it with a rice called Pilau (basmati rice with spices) I even put caramelized onions on top and some raisins when I am cooking and thus has a sweet touch.

The carrot cake is a very delicious cake, maybe because the mix of nuts, the walnuts give you the crunchy, the raisins that extra sweetness. The mixture of spices also gives it a very rich touch, I personally love spices in everything. To finish and give it even more flavor, that cream cheese frosting is great. There are carrot cakes that open in the middle to put the cheese frosting, but I have put this one on top, to make it look more beautiful.

There are as many pasta salads as you want, as the name suggests pasta is the main ingredient, but you can even choose different pastas to make it. Among the ingredients you can add as many as you want, or have at home at that time. Different fruits, nuts, cheeses, vegetables…And the same happens for the dressings. To give it a special touch I make it with fried garlic, but I’ve seen it from mustard vinaigrette, mayonnaise, and berries vinaigrette etc.
