Baked Sweet Potatoes

My husband came from the supermarket the other day with some sweet potatoes and the truth is that he did not know what to do. I thought that they would be very tasty if I baked them, but since I am a lover of salads I thought that the mixture of both would be great. Reminds me of the baked potatoes at the fair (In Spain).

I looked at the fridge to see what I had to put on the sweet potatoes. The truth is that I plan to repeat the recipe because it is very yummy, because of the contrast of hot and cold, sweet and salty….

INGREDIENTS

  • a couple of sweet potatoes
  • 1 avocado
  • 1 tomato
  • 1 can of tuna (80g)
  • ¼ red onion
  • 30-40g corn
  • grated cheese to taste
  • mayonnaise to taste
  • Honey mustard to taste
  • a pinch of salt
  • Pepper

DIRECTIONS

  1. Prick the sweet potatoes with a fork and wrap them in aluminum foil.
  2. They are taken to the oven at 200ºC for 1h or 1.5h, until they are pricked with a knife and go well.
  3. It is removed from the oven, divided into two parts and scratched with a fork so that we detach the meat from the skin, and then we season it.
  4. Now we cut the avocado, the tomatoes, the purple onion into small pieces, these ingredients and all the others are poured into the sweet potato
  5. Finally, add the grated cheese and the mayonnaise and honey mustard sauces.
  6. Ready to eat.
