Delicious Pumpkin Cookies

The month of September and October is pumpkin month and everywhere you go you see pumpkins. Here it is very typical to make bread or chocolate cake. The truth is that it is a delight when you make desserts, because pumpkin goes very well with chocolate, with spices, with cheese frosting…

INGREDIENTS

  • 120 unsalted butter
  • 70g brown sugar
  • 80g white sugar
  • 80g pumpkin puree
  • 210g flour
  • 1 tsp pumpkin pie spices
  • 1/4 tsp instant coffee
  • 1/4 tsp baking soda
  • 1/4 tsp yeast
  • 75g white chocolate chips

DIRECTIONS

  • Beat the butter with the two types of sugar until everything is well integrated.
  • Add the pumpkin and continue mixing.
  • Add the flour, coffee, baking soda and yeast, mix everything well.
  • Finally, add the white cholotale chips.
  • With the help of an ice cream spoon, make balls that are placed on a baking tray with baking paper. Or you can put the dough in the refrigerator for 1 hour so that it cools and is easy to handle with your hands.
  • Place it in the preheated oven at 180C for 13 or 15 minutes.
  • While it is cooling, we frost it on top with Philadelphia cheese and icing sugar and stir until the consistency changes and it is as sweet as we like. I added 50g of cream cheese and 40g of icing or powdered sugar.
