Autumn has arrived with it pumpkins, so instead of using them only on Halloween let’s make some sweet and savory dishes with them. Here I leave you a very rich recipe to enjoy with friends or family. If you want to give it a touch more… of flavor, take them accompanied by a Pumpkin Spice Latte.

INGREDIENTS

  • 60ml sunflower oil
  • 100g brown sugar
  • 100g sugar
  • 180g pumpkin puree
  • 2 eggs
  • 200g all-purpose flour
  • 1 and ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp pumpkin species
  • 1 pinch
  • 30ml coffee
  • 30 ml of milk

Ingredients for the glaze:

  • 150g Philadelphia cheese or cream cheese
  • 100g unsalted butter
  • 250g icing sugar
  • ½ tsp pumpkin spice

DIRECTIONS

  1. In a bowl or container and with the help of some hand whisks we are going to mix: the oil, both, the pumpkin puree and the eggs.
  2. With a strainer we sift the dry ingredients: flour, baking powder, baking soda, pumpkin spices and salt
  3. We mix and integrate all the ingredients with a hand whisker.
  4. Finally, the milk and coffee are added and they are also integrated into the dough.
  5. Pour the dough into muffin capsules and take them to the oven preheated to 180ºC for 18-20 minutes.
  6. Once the time has elapsed and when the toothpick comes out clean from the cupcake, it is removed from the oven and left to rest on a rack for 5 minutes before removing them from the mold.
  7. Now we have to make the frosting, first we beat the butter at medium-high speed for 4 or 5 minutes and if you have a shovel it is better than with a balloon.
  8. Now add the sugar and the spicy pumpkins with the help of a strainer and beat again at medium-high speed for another 4 or 5 minutes, always lower the speed at the beginning so that the sugar does not fly out.
  9. Now add the very cold cheese and beat at medium-high speed for 1 or 2 minutes, but do not over-beat it.
  10. Cream ready to put in a pastry bag and decorate our cupcakes.
