Refreshing Chickpea Salad

The refreshing taste of chickpeas, specially when made a little tangy with fruit pieces of your choice is one of our favorite salads in my family. My way of making a delicious Chickpea Salad is full of goodies that are beneficial to your body, tastebud and mind. It also has hints of some hearty Indian spices such as cumin and garam masala that are known for their healing qualities!

Let’s make my chickpea salad that will please the whole family, shall we?

INGREDIENTS

  • 1 can of cooked chickpeas
  • 1/2 purple onion
  • 1/2 cucumber
  • 2 tomatoes or about 15 cherry tomatoes
  • 1 mango
  • 1/2 lemon or lime
  • 1 piece of ginger
  • 1 chopped chili (optional)
  • 1/4 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp cumin powder
  • 1/4 tsp garam masala
  • olive oil
  • vinegar to taste (optional)

DIRECTIONS

  1. Sauté the chickpeas with salt and the chili powder.
  2. Let cool in a large bowl.
  3. All the ingredients are cut to taste and added to the chickpeas (mango, tomato, cucumber, onion)
  4. Now the spices are added: cumin, garam masala, minced chili, minced ginger, lemon, oil and a little salt and vinegar to taste.
  5. You can decorate with coriander mix as well and… eat!
