Stuffed peppers with rice and chicken

There are millions of ways to stuff peppers, and I particularly love them all. It is a very healthy and balanced meal, because it contains vegetables, meat and in this case rice, so we also have carbohydrates. You can use the same color peppers or vary the colors to give it a prettier display. These peppers are stuffed as if we were going to make burritos but instead of putting them in tortillas we put them in the peppers and take them to the oven.

INGREDIENTS

  • 4 bell peppers
  • 500g minced meat
  • Salt to taste
  • pepper to taste
  • 200g cooked rice
  • 100g corn
  • 2 or 3 cloves of garlic
  • 1 medium carrot
  • 1 medium onion
  • 50g ketchup
  • 150-200g grated cheese
  • Half sachet of spices for tacos or burritos

DIRECTIONS

  1. Prepare the peppers, cutting off the top and removing the seeds.
  2. Cut the vegetables into small pieces, the garlic, the onion and the carrot.
  3. In a frying pan with oil, fry the onion
  4. Then add the garlic and continue cooking.
  5. Now add the pieces of pepper that we have saved from the top of the pepper and carrot and continue cooking.
  6. Now add the minced meat, a little salt and pepper and continue cooking.
  7. When the meat is ready, add the corn and cooked rice and stir to integrate well.
  8. Add the ketchup and cook for a couple more minutes.
  9. Add taco or burrito spices for extra flavor to our filling.
  10. It’s time to put the peppers on a baking tray and start stuffing them with the meat and rice.
  11. The cheese can be put on top and if you like it a lot, put another bit of grated cheese in the middle, between spoon and spoon of filling.
  12. We take it to the preheated oven at 200C for 20 or 30 minutes, depending on how big and thick our peppers are.
  13. Enjoy this tasty food.
