Thai Cashew Chicken

Thai chicken with cashew nuts is one of my favorites. Every time we go out to eat at restaurants I try to find places where they sell it. So I decided to do it. I have to say that it was not easy, I have tried thousands of recipes and finally after mixing a few recipes, I found the one that I personally love. I hope you all like it as much as I do.

I accompany it with a little white rice, or if it is basmati rice with a little coconut flavor, much better.

INGREDIENTS

  • 750g chicken breast
  • salt and pepper to taste
  • 1 tbsp corn flour
  • Ā½ cup raw cashews
  • Ā½ red bell pepper
  • Ā½ green bell pepper
  • Ā½ orange or yellow bell pepper
  • 1 large onion
  • 2 or 3 cloves of garlic
  • 3 chillies
  • Spring onion to taste

For the sauce:

  • 3 tbsp hoisin sauce
  • 2 tbsp oysters sauce
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp of honey
  • 1 tsp garlic paste
  • 1 tsp and Ā½ tsp ginger paste
  • Ā½ tsp salt
  • 1 tbsp lime juice

DIRECTIONS

  1. Mix all the ingredients of the sauce in a container and leave it aside for later.
  2. Cut the chicken into squares of approximately 2.5cm (1inch)
  3. Season the chicken and add cornstarch, saute in a little oil until the chicken is golden brown, remove and set aside.
  4. In the same pan, fry the cashews with the chillies, which we can leave whole or cut. Be careful not to burn the cashews, we must remove them from the heat as soon as they begin to brown and change color. And reserve them.
  5. SautƩ the garlic cloves chopped into small pieces and the onion cut into large pieces.
  6. Without letting the onion cook too much, add the peppers, also cut into rather large pieces and without cooking them too much.
  7. Before the vegetables are overcooked, add the chicken, the cashews with the chillies and the sauce that we made at the beginning.
  8. Cook everything for a minute or two, until the sauce has been integrated with the ingredients, add the chopped spring onion on top (optional) and you can now enjoy this wonderful dish.
