Yummy Banana Pancakes

Who has not bought bananas and they have become too ripe before consuming them? Well, I have a solution to avoid throwing them away so they can be enjoyed in another way: Banana Pancakes. They come out delicious, very easy and can be accompanied by fruit, chocolate, syrup.

And as a food critique, it has gained high praise from my daughter too 🙂

INGREDIENTS

  • 1 ½ cups of flour
  • 2 tbsp sugar
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 small ripe banana
  • 2 eggs
  • 1 cup and 2 tbsp semi-skimmed milk
  • ½ tsp vanilla
  • 3 tbsp melted unsalted butter

DIRECTIONS

  1. We mix the dry ingredients (flour, sugar, baking powder, salt).
  2. Crush the banana.
  3. Add the eggs, milk, vanilla and melted butter and continue mixing.
  4. Now add the dry ingredients.
  5. Make the pancakes, pour a tablespoon in a pan with a little butter. Cook until bubbles start to come out and flip to cook the other side.
  6. To eat it can be accompanied with banana cut into small pieces, or other fruit, a little chocolate and syrup, in this case I have added maple syrup.
  7. With this recipe and this amount of ingredients you can make 12 pancakes.
