INGREDIENTS
š Ingredients:
- 100g unsalted butter
- 60g white sugar
- 60g brown sugar
- 1 egg
- 150 flour
- 1 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 150g grated carrot
- 50g walnuts
- 50g raisins
š Frosting ingredients:
- 40g butter
- 40g icing sugar
- 40g cream cheese
DIRECTIONS
- In a bowl, put the butter at room temperature with the 2 types of sugars and beat at medium speed for 3 or 5 minutes.
- Add the egg and continue beating for another minute.
- Now add the dry ingredients and continue mixing everything.
- Add the carrot and continue mixing.
- Finally, add the raisins and chopped walnuts.
- Put the mixture in another bowl, cover it with transparent paper and place it in the refrigerator for a couple of hours or until the next day.
- Make balls of about 50g and flatten them a little.
- Place them in the oven on a tray with baking paper at 180C for about 14 minutes.
- Take them out of the oven and let them cool.
- Now we are going to make the frosting: Mix the butter and icing sugar and when they are well integrated, add the cheese and continue mixing until the frosting is ready to decorate our cookies.
